- Dual-protein station (80–200 guests) — two roasts (prime rib and tenderloin) with two chefs carving simultaneously. Doubles throughput while offering choice.
- Multi-station setup (200+ guests) — duplicate carving stations positioned at opposite ends of the venue. Same menu, split traffic. Guests never see a line longer than four people.
Protein Selection and Preparation
The quality of a steak station lives and dies in the sourcing and the rest. Every roast is slow-roasted to an internal temperature of 130°F (medium-rare at center), then rested for a minimum of 20 minutes before carving begins. The chef carves from the outside in, offering guests their preferred doneness from well-done edges to rare center cuts.
