For mixed-station events where BBQ is one of several options, drop the per-guest portion to 8 ounces and let the other stations absorb the remaining appetite. Add a diet-friendly menu with grilled vegetable platters and plant-based sausages at the same station to cover guests who want the BBQ experience without red meat.

Pricing for a full BBQ station typically runs $38 to $65 per guest, depending on protein selection and whether you’re adding live-fire elements at an outdoor venue. Brisket-forward setups cost more than pulled pork because of the longer smoking time and higher shrinkage rate — a 15-pound packer brisket yields roughly 7 pounds of finished product after trimming, rendering, and the 12-hour cook.
