The sauces are batch-prepped in our commissary kitchen and held at proper serving temperature on-site using induction warmers. That prep model means no raw cooking odors in the venue — a detail that matters at gallery spaces, hotel lobbies, and corporate offices where persistent cooking smells are a building management concern. The chef’s live work is finishing and tossing, not simmering from scratch, which is what keeps the line moving at 30-plus plates per hour without sacrificing sauce quality.

Yes. We stock gluten-free penne alongside traditional pasta varieties at the same station. The chef uses a clean pot and utensils for gluten-free orders to prevent cross-contamination. No separate station or additional charge required.
Can guests request custom sauce and pasta combinations?
Yes. Guests choose their pasta shape and sauce at the station. The chef prepares each dish individually, so custom combinations are standard — that’s the whole point of a made-to-order format.
How many guests can one pasta station handle?
One chef produces 30 to 35 plates per hour. For events under 120 guests, a single chef is sufficient. For larger events, we add a second chef at the same station to keep wait times under three minutes.
Is the pasta station fully vegetarian-friendly?
Three of the four sauce options work for vegetarians — pesto, four cheese with wild mushrooms, and tomato leek (without pancetta on request). The veal ragu is the only meat-based sauce. We can substitute a marinara or aglio e olio if needed.
Can we add a meat protein to the pasta station?
Yes. Grilled chicken, Italian sausage, or shrimp can be added as protein toppers for an additional per-guest charge. The chef sears the protein separately and adds it to the finished pasta dish for each guest who requests it.
